This dish was a last week creation, so i caramelized some cauliflower and i made a puree, carrots and sauteed wild mushrooms. finished with red wine jus and fried sage.

Arctic Char, taste is between a salmon and a lake trout.
The flash is fine flaked and medium firm. I served it with a carrot puree, zucchini, baby turnips, pickled rumps and a citrus beurre blanc to finish. |
