Searing Scallops

For the perfect scallop, take your scallops out of the fridge well before you plan to cook them. Let them get to room temperature. Next, heat your pan so that when you add a drop of water, the water instantly sizzles. Add some Extra Virgin Olive Oil, season your scallops and then sear for a couple of minutes on one side. After flipping them, add a dollop of butter. Cooking time will vary, depending on the size of scallops. You'll know you have the perfect scallop when it is a golden brown colour on the outside and is just  barely opaque on the inside.
